Homemade marshmallow recipe

Makes 1-1/2 cups

Ingredients:

  • 1 packet unflavored gelatin
  • 1/3 cup cold water for gelatin
  • 1/4 cup cold water for syrup
  • 1 cup sugar
  • Colored sugar for coating
  • Cocoa powder for eyes and nose
  • Silicone mold or animal shaped cookie cutters

Directions:

  1. Lightly coat a silicone mold or small pan with nonstick spray.
  2. In a small saucepan, whisk together 1/3 cup cold water and sugar over medium heat. Once sugar has dissolved, using a cooking thermometer, cook until the temperature reaches between 235-240 degrees F.
  3. In the meantime, combine gelatin and 1/4 cup of cold water in a stand mixer bowl. Let the mixture stand for about one to two minutes, until soft.
  4. Add sugar syrup to gelatin and mix on medium-high speed for about 10 minutes until mixture becomes thick and white.
  5. Pour the marshmallow mixture into your silicone mold and wait about five minutes to pop out of the mold. If you’re using a small pan, cut your desired marshmallow shapes with lightly greased cookie cutters.
  6. Coat marshmallows on a plate with colored sugar. For the face, mix some cocoa powder and warm water together to make a cocoa paste. Use a toothpick to make the eyes and nose dots onto each sugar covered marshmallow.
