Greek-style steak and tomato salad

Serves 4

Ingredients:

  • 1 pound flank steak
  • 1 pound ripe tomatoes, sliced
  • 1 cucumber, peeled and sliced into thin half-moons
  • 12 large radishes, quartered
  • 5 tablespoons olive oil
  • 6 teaspoons sherry vinegar
  • 1 teaspoon spicy brown mustard
  • 1/2 teaspoon salt (for the dressing)
  • 1/2 teaspoon salt (for the steak seasoning)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon cinnamon
  • 2 ounces feta cheese, crumbled

Directions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine the vinegar, mustard and 1/2 teaspoon salt and slowly whisk in the olive oil until well combined. Set aside.
  3. For the steak seasoning add the following to a small bowl: the additional 1/2 teaspoon salt, black pepper, onion and garlic powders, dried parsley and cinnamon. Mix them together well.
  4. Prepare the steak by seasoning it on both sides with the seasoning mixture. Add the steak to the grill for about 8-10 minutes, turning once (or to your preferred doneness).
  5. Place the steak on a carving board and allow it to rest for five minutes, then cut it into thin slices, cutting it against the grain.
  6. Add the tomatoes, cucumber, radishes and feta to a large bowl, then add the steak.
  7. Drizzle the salad with the prepared vinaigrette and serve.

The entire day and evening belong to mom — make it special for her!
