Gluten-Free Fruit and Nut Hot Cereal ( Serves 4)
Ingredients:
- 1 cup buckwheat groats
- 1/2 cup certified gluten-free oats
- 1 apple, cored, chopped
- 2/3 cup dried currants
- 1/4 cup finely chopped crystallized ginger plus more for garnish
- 1-1/2 teaspoons ground cinnamon
- 3 cups water
- Pinch of salt
- 1/2 cup sliced almonds
- 1 banana, sliced crosswise
- Non-dairy milk of your choice
Directions:
- Soak buckwheat and oats in water overnight then drain and transfer to a large saucepan.
- Add apple, currants, ginger, and cinnamon. Stir in water and salt, and bring to a boil over high heat.
- Reduce heat to medium-low and simmer for 15 minutes or until grains are tender.
