Gluten-Free Fruit and Nut Hot Cereal ( Serves 4)

Ingredients:

    • 1 cup buckwheat groats
    • 1/2 cup certified gluten-free oats
    • 1 apple, cored, chopped
    • 2/3 cup dried currants
    • 1/4 cup finely chopped crystallized ginger plus more for garnish
    • 1-1/2 teaspoons ground cinnamon
    • 3 cups water
    • Pinch of salt
    • 1/2 cup sliced almonds
    • 1 banana, sliced crosswise
    • Non-dairy milk of your choice

Directions:

  1. Soak buckwheat and oats in water overnight then drain and transfer to a large saucepan.
  2. Add apple, currants, ginger, and cinnamon. Stir in water and salt, and bring to a boil over high heat.
  3. Reduce heat to medium-low and simmer for 15 minutes or until grains are tender.
  4. Serve hot cereal garnished with almonds, banana slices, extra crystallized ginger, and milk.
