Farro Salad with Artichoke Hearts and Walnuts

- 1 cup farro
- 3 cups water
- Salt
- 8 ounces chopped marinated artichoke hearts (drained)
- 1 cup coarsely chopped toasted walnuts
- 4 green onions, sliced (green and white parts)
- 1/2 cup coarsely chopped roasted red peppers
- 1/4 cup finely chopped fresh parsley
- 3 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar
- Freshly ground black pepper

Directions:

- Toast the farro in a dry medium-sized saucepan over medium-high heat until it is fragrant.
- Remove pan from heat and add water. Add a pinch of salt and bring to a boil.
- Reduce heat to medium-low, cover pan, and cook for 40 minutes or until farro is tender.
- Drain and rinse farro. Place farro in a large bowl and add remaining ingredients.
