Vegan Raspberry Oat Squares

Ingredients:

- 3/4 cup vegan butter
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 cup all purpose flour
- 1/2 cup almond flour
- 2-1/2 cups old-fashioned oats
- 1 teaspoon ground cinnamon
- 1-1/4 cups raspberry preserves
- 1 cup chopped walnuts

Directions:

- Preheat oven to 375 degrees F. and grease a 13×9-inch baking dish.
- In a stand up mixer fitted with the paddle attachment, beat butter and sugars until creamy. Blend in vanilla.
- Add flours, oats, and cinnamon and blend well. Reserve 3/4 cup of the oat mixture and press the rest onto the bottom of the prepared baking dish.
- Spread preserves over the oat mixture.
- Combine reserved oat mixture with walnuts and sprinkle evenly over preserves.
- Bake for 25 minutes. Transfer to a wire rack to cool completely in the dish.
- Cut into squares and serve. Store in an airtight container layered with waxed paper.
