Sweet Potato, Black Bean, and Broccoli Saute

Ingredients:

- 3 tablespoons coconut oil
- 1 large sweet potato, diced
- 2 heads broccoli, stalks cut into matchsticks, florets cut into bite-sized pieces
- Salt and freshly ground black pepper
- Zest and juice of 1 lemon
- 1 (15-ounce) can black beans, rinsed, drained
- 3 garlic cloves, minced
- 1/4 cup finely chopped fresh cilantro
- 1/3 cup pumpkin seeds (pepita)
- Vegan sour cream (optional)

Directions:

- Heat oil in a large skillet over medium heat.
- Add sweet potatoes and broccoli. Season with salt and pepper.
- Cook vegetables, stirring often, until sweet potatoes are just tender.
