Sweet Potato, Black Bean, and Broccoli Saute

Sometimes the best meals are improv dishes made with ingredients I just happen to have on hand when I’m hungry. This vegetable saute is colorful, flavorful, and ultra healthy. Serve it as a vegan holiday side dish or wrap it up in a tortilla as an everyday meal.

Sweet Potato, Black Bean, and Broccoli Saute

Serves 6

Ingredients:

  • 3 tablespoons coconut oil
  • t

  • 1 large sweet potato, diced
  • t

  • 2 heads broccoli, stalks cut into matchsticks, florets cut into bite-sized pieces
  • t

  • Salt and freshly ground black pepper
  • t

  • Zest and juice of 1 lemon
  • t

  • 1 (15-ounce) can black beans, rinsed, drained
  • t

  • 3 garlic cloves, minced
  • t

  • 1/4 cup finely chopped fresh cilantro
  • t

  • 1/3 cup pumpkin seeds (pepita)
  • t

  • Vegan sour cream (optional)

Directions:

  1. Heat oil in a large skillet over medium heat.

  3. Add sweet potatoes and broccoli. Season with salt and pepper.
  4. t

  5. Cook vegetables, stirring often, until sweet potatoes are just tender.

  7. Add lemon juice and zest, black beans, and garlic. Cook, stirring, until beans are heated through.
  8. t

  9. Stir in cilantro and remove from heat. Serve hot, garnished with pumpkin seeds and sour cream, if using.
