Blueberry Toasted Almond Oatmeal

I had the pleasure of spending the holidays with my mom and grandma — and enjoying a menu change. My mom starts many of her days with a power-breakfast of oatmeal, blueberries, and almonds. I can confidently say “power-breakfast” since her cholesterol has dropped significantly since oatmeal became a part of her morning routine. In addition to being great for the heart, this breakfast is also a tasty aid for weight loss, brain health, and beautiful skin. Enjoy!

Blueberry Toasted Almond Oatmeal

Serves 2

Ingredients:

  • 1/3 cup sliced almonds
  • t

  • 2 cups cooked oatmeal, hot
  • t

  • 1 cup blueberries
  • t

  • Sweetener to taste
  • t

  • Dairy-free milk to taste

Directions:

  1. Place almonds in a small dry skillet over medium-high heat. Cook for 5 minutes, shaking skillet frequently, until almonds are lightly toasted. Quickly transfer to a small plate to halt cooking.

  3. Divide oatmeal into 2 bowls. Stir a half-cup of blueberries into each bowl and sweeten to taste.

  5. Top with milk and sprinkle with almonds to serve.
