  • 1 teaspoon pure vanilla extract
  • t

  • 1/2 cup soymilk

Directions:

  3. Remove skillet from the heat and arrange the pineapple slices on the bottom of the skillet and place a cherry-half round-side down into the holes in the pineapple slices.
  4. t

  5. For the cake, preheat oven to 350 degrees F.
  6. t

  7. In a medium bowl, whisk together flour, baking powder, and salt.
  8. t

  9. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg replacers, one at a time. Add vanilla and beat again.
  10. t

  11. Slowly add flour mixture to butter mixture, alternating with the milk, and beat until smooth. Pour cake mixture over pineapples in the skillet.
  12. t

  13. Bake for 30 to 35 minutes, until golden brown and a toothpick inserted in the center comes out clean. Remove from oven and let cool for 5 minutes on a wire rack.
  14. t

  15. Run a knife or spatula around the outside edges to loosen and invert the cake onto a serving plate.
