Grilled Romaine Hearts
Serves 4
Ingredients:

- 2 hearts of romaine
- Olive oil
- Salt and freshly ground black pepper to taste
- Dressing of your choice
- Homemade baked croutons

Directions:

- Cut each heart of romaine in half lengthwise.
- Preheat grill pan over medium heat.
- Generously brush the cut side of romaine hearts with olive oil. Sprinkle with salt and pepper.
- Place romaine hearts cut-side down onto hot grill pan. Grill for 2 to 3 minutes or until lettuce is lightly browned.
- Turn romaine hearts onto their side, grill for 30 seconds, flip onto the other side and grill for 30 seconds.
- Serve cut-side up drizzled with dressing and garnished with croutons.
