Asian Noodle Soup

Serves 2

Ingredients:

    t
  • 3 cups vegetable broth
  • t

  • 3 garlic cloves, sliced
  • t

  • Pinch of red pepper flakes
  • t

  • 2 tablespoons chili sauce
  • t

  • 2 tablespoons sesame oil
  • t

  • 2 tablespoons tamari
  • t

  • 8 ounces soba noodles
  • t

  • 1 small bell pepper, seeded, sliced
  • t

  • 2 red jalapenos, seeded, chopped
  • t

  • 3 heads bok choy, cut into quarters
  • t

  • 1 pound firm tofu, cut into cubes
  • t

  • 1/2 cup finely chopped fresh cilantro
  • t

  • 1 cup sliced green onions (white and green parts)
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. In a stockpot over medium-high heat, combine broth, garlic, red pepper, chili sauce, sesame oil, and tamari.

  3. Bring to a boil then add noodles. Cook 5 minutes or until softened.
  4. t

  5. Add bell pepper, jalapenos, and bok choy. Cook until softened.
  6. t

  7. Reduce heat to a simmer and stir in remaining ingredients. Cook for 2 minutes then serve hot.
