Blackberry Almond Coffee Cake

Ingredients:

- 1 cup fresh blackberries
- 2 tablespoons brown sugar
- 1 cup all-purpose flour
- 1 tablespoon ground flax
- 1/3 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Pinch of salt
- 1/2 cup vegan sour cream
- 3 tablespoons almond milk plus 2 teaspoons for icing
- 3 tablespoons melted vegan butter
- 2 teaspoons pure vanilla extract
- 1/2 cup sliced almonds
- 1/4 cup confectioners’ sugar

Directions:

- Preheat oven to 350 degrees F. and grease an 8-inch square or round baking dish.
- In a small bowl, combine berries and brown sugar. Set aside.
- In a large bowl, whisk together flour, flax, granulated sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk together vegan sour cream, 3 tablespoons almond milk, vegan butter, and vanilla.
- Stir sour cream mixture into flour mixture, stirring just until moist.
- Spoon half of the batter into prepared baking dish. Scatter blackberries evenly over batter. Sprinkle with half of the almonds.
- Spoon remaining batter over blackberries. Scatter remaining almonds overtop.
- Bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean.
- Cool in dish on a wire rack for 15 minutes. Remove from pan.
- Whisk together confectioners’ sugar and 2 teaspoons of almond milk to make an icing. Drizzle icing all over the top of the cake. Slice and serve warm.
