Vegan Pancakes

Ingredients:

- 1 cup all purpose flour
- 2 tablespoons baking powder
- Pinch of salt
- 1 cup dairy-free milk
- 1 tablespoon pure vanilla extract
- 2 tablespoons coconut oil, melted

Directions:

- Preheat griddle to medium-high heat.
- Combine the flour, baking powder and salt in a large bowl until well mixed.
- Mix in the milk, vanilla, and oil and beat together until batter is smooth.
- Drop 1/4 cup of batter at a time onto griddle. Cook for 2 to 3 minutes or until bubbles appear and begin to pop on the surface of the pancake.
- Flip pancakes and cook for another 2 minutes or until both sides are lightly browned. Serve hot.
