Vegan Pancakes for National Pancake Day

Vegan Pancakes

Serves 4

Ingredients:

  • 1 cup all purpose flour
  • t

  • 2 tablespoons baking powder
  • t

  • Pinch of salt
  • t

  • 1 cup dairy-free milk
  • t

  • 1 tablespoon pure vanilla extract
  • t

  • 2 tablespoons coconut oil, melted

Directions:

  1. Preheat griddle to medium-high heat.

  3. Combine the flour, baking powder and salt in a large bowl until well mixed.
  4. t

  5. Mix in the milk, vanilla, and oil and beat together until batter is smooth.
  6. t

  7. Drop 1/4 cup of batter at a time onto griddle. Cook for 2 to 3 minutes or until bubbles appear and begin to pop on the surface of the pancake.

  9. Flip pancakes and cook for another 2 minutes or until both sides are lightly browned. Serve hot.
