Cashew Butter Orange Muffins

- 1-1/2 cups white whole wheat flour
- 3/4 cup rolled oats
- 2 tablespoons grated orange zest
- 2-1/4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup coconut milk
- 1/2 cup maple syrup
- 1/3 cup vegetable oil
- 3/4 cup cashew butter
- 3/4 cup apple sauce
- 3/4 cup orange marmalade

Directions:

- Preheat oven to 350 degrees F. and grease a muffin pan.
- In a large bowl, whisk together flour, oats, orange zest, baking powder, baking soda, and salt.
- In a medium bowl, whisk together coconut milk, maple syrup, oil, cashew butter, and apple sauce.
- Add cashew butter mixture to flour mixture and stir until just moistened.
- Fill each muffin cup half-way with batter. Spoon 1 tablespoon of orange marmalade into each cup. Top off with remaining batter.
- Bake for 25 to 30 minutes or until the tops are golden and spring back when pressed.
- Let muffins cool in the pan on a wire rack for 5 to 10 minutes. Invert and serve warm.
