Roasted Fingerling Potatoes

Ingredients:

- 1 pound fingerling potatoes, halved lengthwise
- 2 tablespoons olive oil
- 1 tablespoon finely chopped fresh rosemary
- 1 teaspoon paprika
- Sea salt and freshly cracked black pepper

Directions:

- Preheat oven to 400 degrees F.
- In a large bowl, toss together potatoes, olive oil, rosemary and paprika. Season with salt and pepper and toss again.
- Spread potatoes on a large baking sheet in a single layer.
- Roast potatoes for 20 to 25 minutes, stirring occasionally, or until potatoes are lightly browned and the skin is crisp.
- Serve immediately.
