When the weather heats up and you start craving a frozen treat, Frozen Delights has all of your frosty desires covered. Vegetarian friendly: Cool Lime Pie

One of our favorite recipes from Frozen Delights is the cool lime ice cream pie. Refreshing, zesty, and a yummy change from the usual scoop of ice cream  in a bowl. This recipe is an orginal from Good Housekeeping.

Serves 10

Ingredients:

  • 5 limes
  • t

  • 1 (14-ounce) can fat-free sweetened condensed milk
  • t

  • 1 pint vanilla ice cream, softened
  • t

  • 1 (6-ounce) ready-to-use graham cracker crust
  • t

  • 1/2 cup heavy or whipping cream
  • t

  • Lime peel slivers for garnish

Directions:

  1. From limes, finely grate 4 teaspoons peel and squeeze 2/3 cup juice.

  3. In a large bowl, whisk together condensed milk, lime zest, and lime juice until blended.

  5. Whisk ice cream into condensed milk mixture until evenly blended.
  6. t

  7. Pour ice cream mixture into crust.
  8. t

  9. Freeze at least 6 hours or until firm. If not serving the pie the same day, wrap and freeze up to 1 week.

  11. To serve, let pie stand at room temperature to soften slightly, about 10 minutes.

  13. Meanwhile, in a small bowl, with mixer at medium speed, beat cream until stiff peaks form.

  15. Top each serving of pie with a dollop of whipped cream and sprinkle with lime slivers.
