Vegan Before 6:00: Mark Bittman is writing another book

VB6: Eat Vegan Before 6:00

Though Bittman admits he is not vegetarian nor vegan, he changed his diet in 2009 to include more plant-based meals. According to Ecorazzi.com, Bittman announced to his readers that he was going to eat vegan meals until 6 pm, at which time he resumed eating animal-based products. The plan, which Bittman called Vegan Before Six, enabled him to lower his weight and cholesterol while promoting a less restrictive, healthy way to improve people’s health and diet.

Bittman has now signed a contract with Clarkson Potter to publish a cookbook entitled VB6: Eat Vegan Before 6:00 to Lose Weight and Restore Your Health…for Good. In his book, which is slated for publishing in 2013, Bittman provides readers with an easy-to-follow 30-day diet plan which is based on 50 simple everyday recipes. Bittman’s recipes will include vegan meals for breakfast and lunch along with flexible meal options for dinner. Bittman is not a strict vegan yet is a strong advocate for plant-based eating and flexitarianism.

Bittman is quoted as saying “The diet that’s best for our health and that of the planet, is unquestionably veganism, or at least near-veganism, or a very very plant heavy diet, or ‘less-meatarianism’ or whatever you want to call it: a diet of mostly plants, none or very few animal products, and certainly no junk or ultra-processed food (among which you could count industrially raised animal products), even if it is theoretically plant-based.”

Bittman may not be exclusively vegan but his dietary approach and upcoming book will certainly appeal to people who are on the vegan fence or want to follow a more conscious diet.
