Radicchio Spinach Salad with Sesame Seed Vinaigrette
Serves 6
Ingredients:

- 1 medium head radicchio, cored, leaves separated and torn
- 5 ounces fresh baby spinach
- 1/2 red onion, thinly sliced
- 2 tablespoons tahini (the thinner varieties work best)
- 3 tablespoons olive oil
- 2 tablespoons rice wine vinegar
- 1 tablespoon minced fresh chives
- 3 tablespoons sesame seeds
- Salt and freshly ground black pepper to taste

Directions:

- In a large bowl, mix together radicchio, spinach, and onion.
- In a small bowl, whisk together tahini, oil, vinegar, and chives.
- Pour half of the vinaigrette over salad and toss to coat. Add more vinaigrette if desired.
- Add sesame seeds and toss again. Serve immediately.
