Radicchio Spinach Salad with Sesame Seed Vinaigrette

Radicchio is one of my favorite salad ingredients. The deliciously bitter brilliantly-colored veg brightens up any dish you put it in. Radicchio Spinach Salad with Sesame Seed Vinaigrette

Serves 6

Ingredients:

    t
  • 1 medium head radicchio, cored, leaves separated and torn
  • t

  • 5 ounces fresh baby spinach
  • t

  • 1/2 red onion, thinly sliced
  • t

  • 2 tablespoons tahini (the thinner varieties work best)
  • t

  • 3 tablespoons olive oil
  • t

  • 2 tablespoons rice wine vinegar
  • t

  • 1 tablespoon minced fresh chives
  • t

  • 3 tablespoons sesame seeds
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. In a large bowl, mix together radicchio, spinach, and onion.
  2. t

  3. In a small bowl, whisk together tahini, oil, vinegar, and chives.
  4. t

  5. Pour half of the vinaigrette over salad and toss to coat. Add more vinaigrette if desired.
  6. t

  7. Add sesame seeds and toss again. Serve immediately.
