Pumpkin Dark Chocolate Bread

Yields 1 loaf

Ingredients:

  • 2 tablespoons ground flax
  • t

  • 6 tablespoons warm water
  • t

  • 2-1/4 cups white whole wheat flour
  • t

  • 1 teaspoon baking soda
  • t

  • 1 teaspoon salt
  • t

  • 1 teaspoon ground cinnamon
  • t

  • 1/2 teaspoon ground ginger
  • t

  • 1/4 teaspoon ground nutmeg
  • t

  • 1/4 teaspoon ground allspice
  • t

  • Generous pinch ground cardamom
  • t

  • 1 cup granulated sugar
  • t

  • 1/2 cup coconut oil, warmed
  • t

  • 1 cup pure pumpkin
  • t

  • 1/3 cup apple juice
  • t

  • 1 cup coarsely chopped dark chocolate

Directions:

  1. Preheat oven to 350 degrees F. and grease a 5×9-inch loaf pan.

  3. In a small bowl, combine flax and water. Set aside for 5 minutes.
  4. t

  5. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cardamom.

  7. In the bowl of a standup mixer fitted with the paddle attachment, combine oil and sugar. Blend on medium to mix. Add pumpkin and apple juice and blend to combine. Add flax mixture and blend to combine.

  9. Add flour mixture and blend on low until moistened then increase to medium high and mix until well-combined.

  11. Stir in chopped chocolate. Pour batter into loaf pan.
  12. t

  13. Bake for 60 to 65 minutes or until a cake tester inserted in the center comes out clean.
  14. t

  15. Cool in pan on a wire rack for 15 minutes.
  16. t

  17. Invert and cool on wire rack for 15 more minutes.
  18. t

  19. Slice and serve warm.
