Oat-Rageous Fruit Squares

Oat-Rageous Fruit Squares

Yields 2 dozen

Ingredients:

  • 2 cups quick-cooking oats
  • t

  • 1-3/4 cups all-purpose flour
  • t

  • 3/4 teaspoon salt
  • t

  • 1/2 teaspoon baking soda
  • t

  • 1 cup granulated sugar
  • t

  • 1 cup vegan butter, softened
  • t

  • 1/2 cup chopped walnuts
  • t

  • 2 to 3 cups fresh fruit (sliced plums, peaches, or other stonefruit, berries, cherries, or diced apples)

Directions:

  1. Preheat oven to 400 degrees F. and grease a 13×9-inch baking dish.
  2. t

  3. In a large bowl, stir together oats, flour, salt, baking soda, and sugar.
  4. t

  5. Add butter to flour mixture and use your fingers to rub butter into the mixture until large crumbs form.
  6. t

  7. Reserve about 2 cups of the oat mixture and set aside.
  8. t

  9. Press the remaining mixture into prepared baking dish. Spread fruit overtop.
  10. t

  11. Sprinkle evenly with reserved oat mixture.
  12. t

  13. Bake for 25 to 30 minutes or until golden.
  14. t

  15. Cool on a wire rack for 30 minutes.
  16. t

  17. Cut into squares and serve warm or allow to cool completely and wrap each square in plastic wrap.
  18. t

  19. Store squares in the refrigerator for up to 1 week.
