Oat-Rageous Fruit Squares
Yields 2 dozen
Ingredients:

- 2 cups quick-cooking oats
- 1-3/4 cups all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup granulated sugar
- 1 cup vegan butter, softened
- 1/2 cup chopped walnuts
- 2 to 3 cups fresh fruit (sliced plums, peaches, or other stonefruit, berries, cherries, or diced apples)

Directions:

- Preheat oven to 400 degrees F. and grease a 13×9-inch baking dish.
- In a large bowl, stir together oats, flour, salt, baking soda, and sugar.
- Add butter to flour mixture and use your fingers to rub butter into the mixture until large crumbs form.
- Reserve about 2 cups of the oat mixture and set aside.
- Press the remaining mixture into prepared baking dish. Spread fruit overtop.
- Sprinkle evenly with reserved oat mixture.
- Bake for 25 to 30 minutes or until golden.
- Cool on a wire rack for 30 minutes.
- Cut into squares and serve warm or allow to cool completely and wrap each square in plastic wrap.
- Store squares in the refrigerator for up to 1 week.
