Quick and Easy Vegan Cornbread

Ingredients:

- 2 cups plain soy milk
- 2 teaspoons apple cider vinegar
- 2 cups cornmeal
- 1 cup unbleached white whole wheat flour
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup coconut oil, warmed
- 3 tablespoons pure maple syrup

Directions:

- Preheat oven to 350 degrees F.
- Spray a 9×13-inch baking dish with cooking spray.
- In a small bowl, stir together soy milk and vinegar. Set aside for 5 minutes.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In a medium bowl, whisk together coconut oil and maple syrup.
- Add soy milk to coconut oil mixture and whisk well to combine.
- Add soy milk mixture to the cornmeal mixture and stir until moistened.
- Pour batter into prepared baking dish and bake for 30 to 35 minutes or until a knife inserted in the center comes out clean.
- Let cool for 5 minutes in the dish then cut into squares and serve.
