Slow Cooker Vanilla Poached Pears

Serves 6

Ingredients:

  • 2 cups dry red wine
  • t

  • 1-1/2 cups water
  • t

  • Zest strips from 1 lemon
  • t

  • Juice of 1 lemon
  • t

  • 1 cup superfine sugar
  • t

  • 2 cinnamon sticks
  • t

  • 2 vanilla beans, split in half lengthwise
  • t

  • 6 ripe but firm pears, peeled, stems intact

Directions:

  1. Combine wine, water, lemon zest, lemon juice, and cinnamon sticks in a slow cooker. Scrape vanilla seeds into the wine mixture. Drop vanilla beans into wine mixture.

  3. Place pears in slow cooker, laying them down so that they are covered with wine mixture.

  5. Cook on HIGH for 4 to 5 hours or until pears are tender.

  7. Remove 1 cup of the red wine mixture and place in a small saucepan. Bring to a boil and continue to boil for 5 minutes or until liquid is reduced by half and has a syrupy consistency. Set aside to cool.

  9. Place pears on individual serving plates or in bowls. Pour poaching liquid onto the bottom of each plate or bowl. Cool.
  10. t

  11. Serve pears drizzled with the syrup.
