Slow Cooker Vanilla Poached Pears

Ingredients:

- 2 cups dry red wine
- 1-1/2 cups water
- Zest strips from 1 lemon
- Juice of 1 lemon
- 1 cup superfine sugar
- 2 cinnamon sticks
- 2 vanilla beans, split in half lengthwise
- 6 ripe but firm pears, peeled, stems intact

Directions:

- Combine wine, water, lemon zest, lemon juice, and cinnamon sticks in a slow cooker. Scrape vanilla seeds into the wine mixture. Drop vanilla beans into wine mixture.
- Place pears in slow cooker, laying them down so that they are covered with wine mixture.
- Cook on HIGH for 4 to 5 hours or until pears are tender.
- Remove 1 cup of the red wine mixture and place in a small saucepan. Bring to a boil and continue to boil for 5 minutes or until liquid is reduced by half and has a syrupy consistency. Set aside to cool.
- Place pears on individual serving plates or in bowls. Pour poaching liquid onto the bottom of each plate or bowl. Cool.
- Serve pears drizzled with the syrup.
