Coconut Roasted Mixed Nuts

Yields 4 cups

Ingredients:

  • 4 tablespoons coconut oil

  • 1 teaspoon curry powder
  • t

  • 1/2 teaspoon ground cinnamon
  • t

  • 1/2 teaspoon ground coriander
  • t

  • 1/4 teaspoon cayenne pepper
  • t

  • 2 tablespoons packed brown sugar
  • t

  • 4 cups mixed nuts

  1. Preheat the oven to 350 degrees F. and line a large rimmed baking sheet with aluminum foil.

  3. In a large saucepan over medium heat, combine coconut oil, spices, and brown sugar. Cook, stirring occasionally, for 2 to 3 minutes or until coconut oil has melted and mixture is smooth.

  5. Add the nuts to the saucepan and stir to coat nuts with coconut oil mixture.

  7. Spread nuts in a single layer on the baking sheet. Bake for 15 minutes or until nuts are toasted and golden. Let cool before serving.
