Coconut Roasted Mixed Nuts
Yields 4 cups
Ingredients:

- 4 tablespoons coconut oil
- 1 teaspoon curry powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 2 tablespoons packed brown sugar
- 4 cups mixed nuts

- Preheat the oven to 350 degrees F. and line a large rimmed baking sheet with aluminum foil.
- In a large saucepan over medium heat, combine coconut oil, spices, and brown sugar. Cook, stirring occasionally, for 2 to 3 minutes or until coconut oil has melted and mixture is smooth.
- Add the nuts to the saucepan and stir to coat nuts with coconut oil mixture.
- Spread nuts in a single layer on the baking sheet. Bake for 15 minutes or until nuts are toasted and golden. Let cool before serving.
