Peanut Butter Chocolate Bars

Ingredients:

  • 2 tablespoons ground flax
  • t

  • 6 tablespoons water
  • t

  • 1 cup vegan butter
  • t

  • 1/2 cup smooth peanut butter
  • t

  • 3/4 cup granulated sugar
  • t

  • 1/2 cup firmly packed brown sugar
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1 teaspoon baking soda
  • t

  • 1 teaspoon baking powder
  • t

  • 1 teaspoon salt
  • t

  • 2-1/4 cups all purpose flour
  • t

  • 3 cups vegan chocolate chips, divided
  • t

  • 1 cup peanuts

Directions:

  1. Preheat oven to 375 degrees F. and grease a 13×9-inch baking dish.

  3. In a small bowl, stir together flax and water. Set aside.
  4. t

  5. In the bowl of a standup mixer fitted with the paddle attachment, combine butter, peanut butter, and sugars. Beat until creamy and smooth.

  7. Add flax mixture and beat until incorporated. Add vanilla, baking soda, baking powder, and salt. Beat until incorporated.

  9. Add flour and beat on low until flour is moistened. Increase speed and beat until just combined.
  10. t

  11. Add 2 cups chocolate chips and the peanuts and stir to combine.
  12. t

  13. Transfer mixture to the prepared baking dish. Sprinkle with remaining chocolate chips.
  14. t

  15. Bake for 20 to 25 minutes or until golden and baked through.

  17. Let cool on a wire rack then cut into bars.
