Healthier Fudge Brownie for Kids

  • 1 (16-ounce) box Cherrybrook Kitchen Fudge Brownie Mix
  • t

  • 3 tablespoons vegan butter, melted
  • t

  • 1-1/2 cups canned Veg-All Original Mixed Vegetables or frozen vegetables, thawed, pureed

  • 1 cup walnuts

Directions:

  1. Preheat oven to 350 degrees F. and grease the bottom and sides of a 9-inch square baking dish.

  3. Combine brownie mix, vegan butter, and veg puree in the bowl of a standup mixer fitted with the paddle attachment. Beat on low until moistened then increase speed and beat until all ingredients are incorporated.

  5. Stir in walnuts. Pour batter into prepared baking dish.
  6. t

  7. Bake for 16 to 18 minutes depending on if you want fudge-like or cake-like texture. Brownies are done when a toothpick inserted in the center comes out clean.

  9. Cool in the baking dish for 10 minutes before inverting onto a cutting board. Cut into 8 brownies.
