Healthier Fudge Brownie for Kids

- 1 (16-ounce) box Cherrybrook Kitchen Fudge Brownie Mix
- 3 tablespoons vegan butter, melted
- 1-1/2 cups canned Veg-All Original Mixed Vegetables or frozen vegetables, thawed, pureed
- 1 cup walnuts

Directions:

- Preheat oven to 350 degrees F. and grease the bottom and sides of a 9-inch square baking dish.
- Combine brownie mix, vegan butter, and veg puree in the bowl of a standup mixer fitted with the paddle attachment. Beat on low until moistened then increase speed and beat until all ingredients are incorporated.
- Stir in walnuts. Pour batter into prepared baking dish.
- Bake for 16 to 18 minutes depending on if you want fudge-like or cake-like texture. Brownies are done when a toothpick inserted in the center comes out clean.
- Cool in the baking dish for 10 minutes before inverting onto a cutting board. Cut into 8 brownies.
