Asian Noodles with Veggies and Sesame Seeds
Serves 4
Ingredients:

- 8 ounces linguini, soba noodles, or other noodles of your choice
- 2 tablespoons coconut oil
- 2 carrots, quartered, cut into sticks
- 1 red bell pepper, seeded, cut into strips
- 1/2 pound snow peas
- 1/2 cup shelled edamame
- 4 green onions, sliced (green and white parts)
- Salt and freshly ground black pepper to taste
- A San-J Asian cooking sauce of your choice
- 3 tablespoons sesame seeds
- Fresh cilantro for garnish

Directions:

- Cook noodles in a large pot of salted boiling water according to package directions.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add carrots and pepper. Cook, stirring often, until carrots are crisp-tender.
- Add snow peas, edamame, and green onions. Cook stirring often until snow peas are heated through. Season with salt and pepper. Turn heat to low.
- Drain noodles and return to the pot. Drizzle with a little of the sauce, tossing to coat. Add vegetable mixture and toss to coat.
- Divide among 4 plates and sprinkle with sesame seeds and cilantro. Serve hot.
