Asian Noodles with Veggies and Sesame Seeds

Asian Noodles with Veggies and Sesame Seeds

Serves 4

Ingredients:

    t
  • 8 ounces linguini, soba noodles, or other noodles of your choice
  • t

  • 2 tablespoons coconut oil
  • t

  • 2 carrots, quartered, cut into sticks
  • t

  • 1 red bell pepper, seeded, cut into strips
  • t

  • 1/2 pound snow peas
  • t

  • 1/2 cup shelled edamame
  • t

  • 4 green onions, sliced (green and white parts)
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • A San-J Asian cooking sauce of your choice
  • t

  • 3 tablespoons sesame seeds
  • t

  • Fresh cilantro for garnish

Directions:

  1. Cook noodles in a large pot of salted boiling water according to package directions.
  2. t

  3. Meanwhile, heat oil in a large skillet over medium-high heat. Add carrots and pepper. Cook, stirring often, until carrots are crisp-tender.

  5. Add snow peas, edamame, and green onions. Cook stirring often until snow peas are heated through. Season with salt and pepper. Turn heat to low.
  6. t

  7. Drain noodles and return to the pot. Drizzle with a little of the sauce, tossing to coat. Add vegetable mixture and toss to coat.
  8. t

  9. Divide among 4 plates and sprinkle with sesame seeds and cilantro. Serve hot.
