Comfort food: Tomato Soup

Serves 4

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 1-1/2 cups diced onion
  • t

  • 2 cloves garlic, minced
  • t

  • 1 teaspoon Italian seasoning
  • t

  • 2 tablespoons all purpose flour
  • t

  • 2 cups vegetable broth
  • t

  • Pinch of salt
  • t

  • Freshly ground black pepper to taste
  • t

  • 1 tablespoon agave
  • t

  • 1 (28-ounce) can whole plum tomatoes
  • t

  • 1/2 cup soy milk
  • t

  • 3 tablespoons finely sliced fresh basil leaves plus more for garnish

Directions:

  1. In a large pot over medium heat, heat oil. Add onion and cook, stirring often, until softened. Add garlic and Italian seasoning and cook, stirring, for 1 minute.

  3. Sprinkle flour over onion and cook, stirring, until flour becomes golden. Pour in broth and add salt and pepper. Stir to combine. Stir in agave.

  5. Bring to a simmer. Add tomatoes and bring to a simmer. Reduce heat to medium-low and continue to simmer for 10 minutes.

  7. Using an immersion blender, puree soup until chunky. Add basil and puree until desired consistency.
  8. t

  9. Stir in soy milk and cook for 5 minutes or until well heated through. Adjust seasoning with salt and pepper.
  10. t

  11. Serve hot, garnished with basil.
