Whole Wheat Pizza Dough
Makes 2 (12-inch) pizza crusts
Ingredients:

- 1 (.25-ounce) active dry yeast
- 1-1/3 cups warm water
- 1 tablespoon granulated sugar
- 1 tablespoon olive oil
- 3-1/3 cups white whole wheat flour
- 2 teaspoons salt

Directions:

- In a bowl, stir together yeast, water, and sugar. Let stand for 5 minutes or until yeast becomes foamy. Stir in oil.
- In the bowl of a standup mixer fitted with the paddle attachment, combine flour and salt. Blend on low to combine.
- Add yeast mixture to flour and mix on low until flour is moistened. Increase to medium until a dough forms.
- Remove paddle and attach dough hook. Knead on medium speed until dough is smooth and elastic, about 8 minutes.
- Place dough in an oiled bowl, turning dough to coat with the oil. Cover with plastic wrap and set in a warm, draft-free place until doubled in size.
- Place a pizza stone in the oven and preheat to 450 degrees F.
- Punch dough down and turn out on a lightly floured surface. Knead into a disk and divide in half.
- Knead each portion of dough into a disk then roll out into a 12-inch circle.
- Lightly sprinkle a pizza peel with cornmeal and place 1 pizza crust on the peel then slide it onto the stone. Cover the second pizza with a damp towel.
- Bake pizza crust for 3 minutes. Use peel to remove and transfer to a wire rack. Repeat with second pizza crust.
- Top each pizza crust with desired toppings and slide each onto the pizza stone. Bake for 10 minutes or until the crust is crisp and lightly browned. Repeat with second crust.
