Small Batch Molasses Cookies

Ingredients:

  • 1 cup plus 2 tablespoons all purpose flour
  • t

  • 1 teaspoon baking soda
  • t

  • 1/2 teaspoon ground cinnamon
  • t

  • 1/2 teaspoon ground ginger
  • t

  • 1/2 teaspoon ground cloves
  • t

  • 1/8 teaspoon salt
  • t

  • 1/2 cup firmly packed light brown sugar
  • t

  • 6 tablespoons vegetable or melted coconut oil
  • t

  • 2 tablespoons mild molasses
  • t

  • 1/2 teaspoon pure vanilla extract
  • t

  • 2 tablespoons drained, unsweetened applesauce
  • t

  • Sparkling sugar for sprinkling

Directions:

  1. Preheat oven to 325 degrees F.
  2. t

  3. Line 2 baking sheets with parchment paper.
  4. t

  5. Mix the flour, baking soda, cinnamon, ginger, cloves, and salt together in a small bowl.
  6. t

  7. Mix brown sugar, oil, molasses, vanilla, and applesauce together in a medium-sized bowl.
  8. t

  9. Add flour mixture to brown sugar mixture and stir until blended.
  10. t

  11. Scoop up tablespoonfuls of dough and shape into 3/4-inch balls. Arrange about 2-1/2 inches apart on the prepared baking sheets and press down to about 1/2-inch thickness.

  13. Sprinkle tops of the cookies with sugar.

  15. Bake one sheet at a time for 13 to 15 minutes.

  17. Let cool on the baking sheets for 2 minutes then transfer to a wire rack to cool completely.
