Maria’s Minestrone Soup

Serves 6

Ingredients:

    t
  • 2 tablespoons extra virgin olive oil
  • t

  • 1 medium onion, chopped
  • t

  • 1 celery rib, chopped
  • t

  • 1 carrot, chopped
  • t

  • 2 cloves garlic, minced
  • t

  • 1 (19-ounce) can kidney beans, rinsed, drained
  • t

  • 1 (14.5-ounce) can crushed tomatoes
  • t

  • 1 tablespoon tomato paste
  • t

  • 1 quart vegetable broth
  • t

  • 1/2 cup medium pasta shells, cooked according to package directions
  • t

  • 2 tablespoons chopped fresh parsley

Directions:

    t
  1. Heat olive oil in heavy pot over medium heat.
  2. t

  3. Add onion, celery, carrot, garlic, and parsley. Sauté 3 to 5 minutes.
  4. t

  5. Add beans, tomatoes, tomato paste, and stock.
  6. t

  7. Bring to boil, cover, and reduce heat to simmer. Let cook 30 minutes. Add pasta during last 5 minutes.
  8. t

  9. Correct seasoning and stir in parsley before serving.
