Apple Butter Grilled Cheese Sandwich

Ingredients:

- 2 slices whole grain bread
- 2 tablespoons storebought or homemade apple butter
- 1/4 cup Daiya Mozzarella Shreds
- 2 tablespoons vegan butter, melted

Directions:

- Heat a skillet to medium.
- Slather one side of each slice of bread with apple butter.
- Sprinkle cheese on the apple buttered side of one slice of bread. Top with remaining slice of bread, apple buttered side down to make a sandwich.
- Brush both sides of the sandwich with melted butter. Spray the skillet with cooking spray.
- Place sandwich in the skillet and cover (this will help melt the cheese). Cook for 2 to 3 minutes or until lightly browned.
- Flip sandwich and continue to cook, covered, until cheese is melted and both sides of the sandwich are lightly browned.
