Roasted Vegetables and Chickpeas with Arugula

Roasted Vegetables and Chickpeas with Arugula

Serves 6

Ingredients:

  • 1 acorn squash
  • t

  • 1 bunch baby beets
  • t

  • Olive oil
  • t

  • 1/2 cup pitted Kalamata olives, sliced
  • t

  • 1 pint cherry tomatoes, each halved
  • t

  • 1 (15-ounce) can chickpeas, drained, rinsed
  • t

  • 3 cups arugula
  • t

  • Salt and freshly ground black pepper
  • t

  • Pomegranate molasses

Directions:

  1. Preheat oven to 400 degrees F.
  2. t

  3. Poke acorn squash a bunch of times with a knife.  Microwave on HIGH for 5 minutes or until squash gives just a bit when squeezed (you don’t want it to be mushy).

  5. Use a sharp knife to cut squash in half. Scoop out the seeds and peel the squash. Cut into large cubes.

  7. Place beets in a microwave-safe bowl with a couple tablespoons of water. Microwave on HIGH for 5 minutes or until beets start to soften.

  9. Place beets and squash on a roasting sheet and drizzled with olive oil. Roast for 20 minutes or until squash and beets are tender.

  11. Meanwhile, in a large bowl, combine olives, tomatoes, chickpeas, and arugula. Season with salt and pepper and drizzle with pomegranate molasses and a generous pour of olive oil.

  13. Add squash and beets and toss to coat with molasses and olive oil. Season again with salt and pepper.
  14. t

  15. Serve immediately.
