After paging through the Cooking with Trader Joe’s Cookbook: Skinny Dish, I wanted to run back to California so I could cook recipe after recipe with ingredients from the iconic market that enjoys a cult-like following. Fortunately, Jennifer K. Reilly, author of this vegan cookbook, styles her recipes with ingredients that you can get at Trader Joe’s as well as other grocery stores. Reilly’s raw food mango pie is an easy five-ingredient recipe made with ingredients you may already have in your kitchen, whether or not you’re near a TJ location.

Raw Mango Pie

Recipe from Trader Joe’s Cookbook: Skinny Dish by Jennifer K. Reilly

Serves 8

Ingredients:

    t
  • 6 fancy Medjool dates, soaked in warm filtered water for 10 minutes
  • t

  • 4 mangos, pitted, cut into chunks (or one 24-ounce bag frozen mango chunks, thawed)
  • t

  • 2 bananas
  • t

  • 1-1/2 cups Just Almond Meal
  • t

  • 1/8 teaspoon sea salt

Directions:

  1. While dates are soaking, blend mangos and 1 banana until smooth. Set aside.
  2. t

  3. In a food processor or blender, process almond meal, dates, and salt until well-blended. Press into a freezer-safe pie pan or baking dish, or 8 individual serving cups. (We suggest the serving cups for ease in serving.)
  4. t

  5. Pour mango banana mixture into pie pan, baking dish, or serving cups. Freeze for about 6 hours, until firm.
  6. t

  7. Let pie sit for about 30 minutes at room temperature before serving with banana slices.
