Colorful Pepper and Zucchini Saute

Serves 6

Ingredients:

  • 3 tablespoons olive oil
  • t

  • 2 small leeks, sliced (white and light green parts only)
  • t

  • 1 orange bell pepper, seeded, cut into strips
  • t

  • 1 red bell pepper, seeded, cut into strips
  • t

  • Salt and freshly ground black pepper
  • t

  • 2 zucchini, ends trimmed, diced
  • t

  • 2 cloves garlic, minced
  • t

  • 1 tablespoon minced fresh tarragon
  • t

  • 1 tablespoon minced fresh parsley
  • t

  • 1 tablespoon fresh thyme leaves

Directions:

  1. Heat oil in a large skillet over medium heat.

  3. Add leeks and peppers. Season with salt and pepper. Cook, stirring often, until vegetables soften.
  4. t

  5. Add zucchini and continue to cook, stirring often, until zucchini softens.
  6. t

  7. Add garlic and herbs. Cook, stirring, for 1 minute.
  8. t

  9. Serve hot.
