- 2 small leeks, sliced (white and light green parts only)
- 1 orange bell pepper, seeded, cut into strips
- 1 red bell pepper, seeded, cut into strips
- Salt and freshly ground black pepper
- 2 zucchini, ends trimmed, diced
- 2 cloves garlic, minced
- 1 tablespoon minced fresh tarragon
- 1 tablespoon minced fresh parsley
- 1 tablespoon fresh thyme leaves
