Ranch cucumber bites

These bites are the perfect snack for summer. Fresh cucumbers are transformed into little cups and filled with a creamy ranch dip using Greek yogurt. Make these ahead and keep them chilled for when you want a tasty guilt-free snack.

Ever dip cucumber slices into ranch dressing as a snack? Here we share that same great flavor in a fun new way. The cucumber “cups” hold the ranch so you don’t have to worry about the dipping part. Instead of using mayonnaise in our ranch dip, we substituted plain Greek yogurt to keep this recipe super healthy.

Ranch cucumber bites recipe

Yields 12 bites

Ingredients:

  • 2 English cucumbers
  • 1 cup plain Greek yogurt
  • 1 envelope powdered ranch mix
  • Fresh parsley for garnish (optional)

Directions:

  1. Cut each cucumber into 6 (1 inch) pieces. Gently scoop out the center with a spoon, careful not to go through the bottom. You want to create a “bowl” out of the cucumber.
  2. In a bowl, add the Greek yogurt and the envelope of ranch powder mixing well. Spoon the mixture into each of the cucumbers. Garnish with parsley and serve immediately.
