Iced raspberry cafe mocha recipe
Serves 3
Ingredients:
For the raspberry cocoa mixture
- 1 cup water
- 2 tablespoons sugar
- 1 cup fresh raspberries
- 1 tablespoon unsweetened cocoa powder
For the cafe mocha
- 4 cups brewed coffee, chilled
- 1 cup raspberry cocoa mixture
- 3/4 cup milk or cream
- Sugar or sugar substitute (sweeten to taste)
- 4 cups ice
- 12 whole fresh raspberries (for garnish)
Directions:
For the raspberry cocoa mixture
- In a small saucepan, add the water, sugar, raspberries and cocoa powder.
- Heat the pan on low to medium heat. Stir the mixture as the raspberries cook down and the mixture thickens. Cook for about 10 minutes.
- Pour the raspberry mixture through a fine strainer.
- Set aside the liquid and let cool.
For the cafe mocha
- Pour the coffee into the serving glasses.
- Then add the raspberry cocoa liquid into the glasses and stir.
- Add the milk or cream, and the sugar or sugar substitute.
- Stir all ingredients together.
- Add the ice, garnish with the whole raspberries, and serve immediately.
