If you are like us, we like our coconut milk lightly sweetened with a little vanilla flavor. You can easily sweeten your homemade milk with liquid vanilla stevia or using liquid stevia and pure vanilla extract.
Enjoy this treat any way you would normally use cow’s milk.
DIY organic coconut milk recipe
Yields 6 servings
Ingredients:
- 2 cups organic unsweetened shredded coconut
- 4 cups boiling water
- Cheesecloth
Directions:
Tip: You can easily sweeten or flavor your coconut milk using liquid stevia or pure vanilla extract
- To a blender (we used a Vitamix), add the 2 cups of shredded coconut and the 4 cups of boiling water. Blend on high for 45 seconds or until the mixture is smooth.
- Over a bowl, place a strainer. Line the strainer with the cheesecloth and pour the mixture into the center. Gently twist and squeeze the cheesecloth to remove as much of the liquid as possible.
- Store the coconut milk in a jar in the refrigerator for up to several days.
