3 Unique & fresh balsamic desserts

We love balsamic vinegar so much, we could easily drink it through a straw. However, many others may frown on such behavior. So, instead, we’ve mixed it into three of our favorite summer dessert classics.

The tang from the vinegar gives each of these fruity, sweet desserts the modern edge they need. In fact, you’ll love them so much you may never go back to the boring originals, trust us.

Peach cobbler with balsamic glaze

Serves about 6

Ingredients:

For the cobbler

  • 2 large peaches, sliced
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • Dash of salt
  • 3/4 cup low-fat milk
  • 1 stick unsalted butter, melted
  • Whipped cream for garnish

For the glaze

  • 1 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce

Directions:

  1. Preheat oven to 375 degrees F. Grease a baking dish with nonstick cooking spray.
  2. Mix the peach slices with the sugars and let sit for about 5 minutes.
  3. In a large bowl, whisk the flour, baking powder and salt together. Add the milk and melted butter and stir to combine (you’ll get a thick dough).
  4. Place the peach sugar slices in the baking dish. Top with dough and bake for about 40 minutes, or until golden brown.
  5. Meanwhile, make glaze by bringing the vinegar, honey, cornstarch and soy sauce to a boil, whisking constantly. Let heat until thick, about 15 minutes.
  6. Drizzle glaze over cobbler and enjoy!

Roasted strawberry and balsamic ice cream

Serves about 6

Ingredients:

For the strawberries

  • 1-1/2 cups strawberries, washed and hulled
  • 1/2 tablespoon sugar
  • 2 tablespoons balsamic vinegar

For the ice cream

  • 3/4 cup milk
  • 1-1/2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 300 degrees F. Place strawberries in a greased baking dish and toss with sugar and balsamic vinegar. Roast for about 15 minutes or until soft. Once cooked, smoosh with the back of a spoon until squished.
  2. Whisk the milk, heavy cream, sugar and vanilla together until sugar is dissolved, about 2 minutes. Mix in the smashed strawberries and balsamic drippings. Cover with foil and chill for at least an hour.
  3. Once chilled, pour into the freezer basin of an ice cream maker and churn for 15–20 minutes or until thick.
  4. Drizzle with additional balsamic glaze and enjoy!

Mixed berry & balsamic milkshake

Serves about 2-3

Ingredients:

  • 2 cups frozen berries
  • 1 cup chocolate ice cream
  • 1 cup milk
  • 1 frozen banana
  • Whipped cream
  • 2–3 tablespoons balsamic glaze (use the recipe above in the cobbler recipe)

Directions:

  1. Place the berries, ice cream, milk and banana in a blender. Blend on low until thick and creamy.
  2. Top with whipped cream and a few teaspoons of balsamic glaze.
