Serves 4
Ingredients:
For pancakes
- 1 cup Bisquick
- 1 tablespoon unsweetened cocoa powder
- 1/2 cup chocolate milk
- 1/2 teaspoon vanilla extract
- 1 large egg
For filling
- 1/2 cup plain vegetable shortening
- 1 teaspoon vanilla bean paste
- 3-1/2 cups powdered sugar
- 3 tablespoons hot water (from the tap)
For chocolate sauce
- 1/2 cup water
- 3/4 cup sugar
- 1/2 cup cocoa powder
- 1/8 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
Directions:
For pancakes
- Preheat a flat griddle to 375 degrees F.
- In a large bowl, mix together all ingredients for the pancakes and stir until smooth.
- Add batter to the griddle in 1/4 cup spoonfuls. Cook till bottom is cooked and top is bubbling. Flip and cook on the other side. Continue until all pancakes have been made.
For filling
- In a bowl of an electric mixer add filling ingredients and beat for at least 2 minutes.
For chocolate sauce
- Combine all ingredients except vanilla extract to a saucepan over medium heat.
- Continually stir until the sauce starts to thicken.
- Take off the heat and stir in vanilla extract.
- As it cools it will become slightly thicker. Just remember this is chocolate sauce so it will not be as thick as fudge sauce.
For assembly
- Spread filling on top of one pancake (make it as thin or as thick as you like) and top with another pancake.
- Drizzle with chocolate sauce.
