Not only is shrimp low in calories and fat, it’s incredibly versatile. You can mix them with pasta, toss in them salad or serve them up in fluffy tortillas, the possibilities are absolutely endless! Celebrate the kids going back to school with a bottle of your favorite sparkling wine and one of these fresh and easy shrimp recipes.
Tequila shrimp ceviche with peach
Serves 2
Ingredients:
- 1 cup chopped shrimp
- 1/2 medium red onion, chopped
- 1/2 avocado, chopped
- 3 cherry tomatoes, sliced in thirds
- 1/2 peach, chopped
- 2 tablespoons white tequila
- 1/2 lime, juiced
- Salt and pepper
Directions:
- Mix the shrimp, red onion, avocado, tomatoes, peach, white tequila, lime juice and salt and pepper. Toss to combine.
- Cover the bowl with foil and let chill for at least 2 hours.
Fresh shrimp and arugula salad with strawberry vinaigrette
Serves 4
Ingredients:
- 4 cups baby arugula
- 5 fresh strawberries, hulled and sliced
- 1/4 cup goat cheese, crumbled
- 1/2 medium red onion, chopped
- 8 pieces of fresh shrimp, cooked
For the dressing
- 4 strawberries, whole and hulled
- 1-1/2 tablespoons white wine vinegar
- 1-1/2 tablespoons extra-virgin olive oil
- 1-1/2 teaspoons honey
- Salt and pepper
Directions:
- To make the dressing, place the strawberries, vinegar, olive oil, honey and salt and pepper in a blender. Pulse on low until smooth.
- Mix the arugula, strawberries, goat cheese and medium red onion together. Top with strawberry dressing.
Cream pasta with shrimp, tomatoes and basil
Serves 6
Ingredients:
- 8 ounces spaghetti noodles
- 1 pound large shrimp, cooked and chopped
- 1 tablespoon butter
- 1 cup light cream
- 1/2 cup low-fat milk (we used 2%)
- 1/4 cup shredded Parmesan cheese
- 1 cup sliced cherry tomatoes
- Fresh basil, chopped
- Salt and pepper to taste
Directions:
- Bring a large pot of water to a boil and add salt. Add pasta and cook until soft, about 8-10 minutes. Rinse and set aside.
- Meanwhile, melt butter over medium heat. Stir in pasta, shrimp, light cream, low-fat milk and Parmesan cheese. Reduce heat to low and let cook until sauce is thick, stirring constantly.
- Once cooked, stir in chopped basil and tomatoes. Garnish with additional cheese and salt and pepper.
Maple bacon-wrapped shrimp
Yields about 8
Ingredients:
- 8 jumbo shrimps, cooked
- 8 slices of bacon
- 2 tablespoons pure maple syrup
- Brown sugar
Directions:
- Preheat oven to 400 degrees F. Line a baking dish with foil and spray with nonstick cooking spray.
- Carefully wrap each shrimp with bacon slices. Place on the foil and sprinkle with salt and pepper. Drizzle with maple syrup and sprinkle with brown sugar.
- Bake for about 8 minutes on each side, or until crispy and browned.
