Homemade tortellini

Want to impress your super snooty neighbor who is coming over for dinner? You know the one, who has perfect hair and is always saying “bless your heart” when she looks at the state of your house? Forget duck or turkey and make a big batch of this beautiful homemade tortellini!

Don’t worry, these homemade tortellini are far easier to make than they sound, trust us! Homemade pasta is simple, all you need are these amazing KitchenAid pasta attachments for your stand mixer, three ingredients and about an hour’s time. The end result is absolutely perfect, and you’ll never want to buy boxed tortellini again.

Homemade tortellini recipe

Ingredients:

For the pasta dough

  • 2 cups all-purpose flour
  • Sea salt
  • 3 eggs
  • Water

For the filling

  • 1/2 cup ricotta cheese
  • 2-1/2 tablespoons soft goat cheese
  • 2 tablespoons chopped fresh basil
  • Salt and pepper

Mix pasta ingredients & filling

Whisk the flour and salt together in a large mixing bowl. Make a well in the center and add eggs. Carefully mix the eggs into the flour mixture, being sure to scoop the flour from the bottom and sides of the bowl. Using your hands, roll the dough into a ball and place back in the mixing bowl. Cover with foil and let sit for about 30 minutes.

Meanwhile, make the filling by mixing the cheese, goat cheese, basil and salt and pepper. Cover and chill until use.

Roll out pasta dough

Attach the pasta rolling attachment to the mixer and set to first setting (1). Roll the dough out with a wooden rolling pin. Cut the dough in half and roll out each half as thin as you can. Push the half of the pasta through the roller attachment so it thins out.

Repeat another 2 times. Then continue to thin out the pasta by pushing it through each setting until you reach setting 6. You’ll want to flour the dough each time you push it through a new setting to ensure it doesn’t stick to the rolling attachment. *Don’t skip a setting or the pasta won’t turn out right.

Stamp out tortellini shapes

Once rolled out, using a 3-inch circular cookie cutter (or a 1/4 cup measure), punch out circle shapes.

Once shapes are stamped, fill each circle with about 1 teaspoon of filling.

Roll tortellini

To roll the tortellini, fold each circle into a triangle.

Dip your hands in water and press the edges of the triangle together so it sticks. Then carefully bring both edges of the triangle toward each other to make a circle shape.

Using the stem of a spoon (or your pinky finger) press it over the top of the round portion of the tortellini.

Then press the tips of the tortellini together (so they are stuck) and very carefully pull the tortellini off your finger (or the spoon).

Cook pasta

Bring a large pot of water to a boil. Add tortellini and salt to the pot and cook until the tortellini float to the top, about 2–3 minutes. Rinse in a colander and enjoy!
