It’s time for the soba noodle to get the spotlight. This often overlooked Asian noodle is full of flavor and so incredibly versatile, so it’s time to throw out the rice and make way for soba! We’ve whipped up three unique dishes that highlight this fabulous noodle.
From a simple salad made with a fresh lemon vinaigrette to a heartier soup filled with shrimp and tofu, there’s a recipe for just about any occasion. So what are you waiting for? Soba up!

Asian peanut butter soba pasta
Serves about 2
Ingredients:
- 3-1/2 ounces soba noodles (about 1 bundle)
- 5 tablespoons creamy peanut butter
- 1-1/2 tablespoons soy sauce
- 2-1/2 tablespoons rice vinegar
- Salt and pepper to taste
- 3 tablespoons warm water
- About 1-1/2 tablespoons white sugar
- 1 medium orange sweet pepper, chopped
- 2 tablespoons red onion
- Fresh parsley
Directions:
- Heat a medium pot of water to a boil and add salt. Add soba noodles and cook until soft and al dente, about 2 minutes. Rinse in cold water in a colander.
- Meanwhile, whisk the peanut butter, soy sauce, rice vinegar, water, sugar and salt and pepper. Add additional salt to taste.
- Mix the sauce with the soba noodles and mix in with the sweet peppers and red onion. Garnish with fresh parsley.

Simple soba salad with lemon vinaigrette
Serves about 4
Ingredients:
- 1/2 pound soba noodles
- 2 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 1/4 cup extra-virgin olive oil
- 1/2 bunch green onions, chopped
- 1 large cucumber
- 1/4 cup cold water
- 2 tablespoons lemon juice
- Red pepper flakes
- 1 cup cherry tomatoes, sliced
- Fresh cilantro
Directions:
- Heat a medium pot of water to a boil and add salt. Add soba noodles and cook until soft and al dente, about 2 minutes. Rinse in cold water in a colander.
- Slice the cucumber into julienne slices. Mix the soba noodles, green onions, cucumber, tomatoes, red pepper flakes and fresh cilantro together.
- In another bowl, whisk the water, lemon juice, olive oil and rice vinegar together with a whisk. Pour the mixture over the soba noodle salad and serve.

Easy soba noodle soup

Serves 2
Ingredients:
- 2 bundles soba noodles
- 3 cups water (for boiling)
- 1/4 cup onion soup base
- About 6 shrimp, deveined and cooked
- 6 fresh mushrooms, sliced
- 3 tablespoons frozen peas
- Salt and pepper
Directions:
- Bring a pot of water to a boil and add soba noodles. Cook until soft, about 2 minutes. Rinse in cold water and set aside.
- In another pot, bring the 3 cups of water to a boil. Add the onion soup base, frozen peas and mushrooms. Bring mixture to a simmer. Add shrimp and soba noodles. Heat for about 2-5 more minutes. Add salt and pepper to taste. Garnish with fresh cilantro.
