3 Fun back-to-school cookie desserts

Want to make going back to school just a little less painful (and secure your kid’s spot at the cool kids’ table)? Instead of Oreos or chocolate chip, pack a few of these adorable back-to-school cookies into the lunchbox!

These cute edible chalkboards, pencils and crayons will be a fun surprise when your son or daughter pops open the lunchbox. For some extra brownie points with the teachers, send a big plate of these with your kids on the first day of school!

Chalkboard cookies

Inspired by Bakingdom

Yields about 12 cookies

Ingredients:

  • 8 square cookies (use the perfect sugar cookie recipe below)
  • Canola oil
  • Royal icing
  • Black fondant
  • White dusting sugar
  • Toothpick
  • Orange icing gel

Directions:

  1. Cut out a rectangle (smaller than the square cookie) of black fondant. Place a small dab of royal icing onto of the center of the cookie and place the fondant square over it. Using the orange icing gel, outline the fondant (so it frames the chalkboard).
  2. Place the white dust into a bowl and dip a slightly damped tip of the toothpick into it. Carefully write fun back-to-school sayings on the fondant.

Pencil cookies

Yields about 12 pencils

Ingredients:

  • 12 pencil cookies (use below recipe)
  • Yellow decorating icing
  • Pink decorating icing
  • Black decorating icing
  • White decorating icing

Directions:

  1. To begin, outline 2/3 of the large rectangle of the pencil shape with yellow icing. For the tip, squiggle the yellow icing near the point.
  2. Then paint two small white lines behind the yellow icing toward the end of the rectangle. Outline the small square behind the white lines with pink (for the eraser). Carefully fill in the pink eraser with pink decorating icing. Repeat with the yellow icing in the body of the pencil.
  3. Add a few dabs of yellow icing to the white icing to make a vanilla color. Fill in the areas of the point with vanilla color, leaving a small segment for the pencil point. Add a dab of black icing to the top of the vanilla to make a pencil.

Crayon cookies

Yields 12 crayons

Ingredients:

  • 12 sugar cookie crayons (use below recipe)
  • Green cookie icing
  • Yellow cookie icing
  • Black icing gel

Directions:

  1. Once cookies are cooled, use the black icing gel to create two rectangles toward the end of each cookie and one oval toward the front. Add outlines of the green and yellow along the outside of the cookie.
  2. Carefully fill in the color so all you’re left with are the black outlines. Fill those with black icing gel. To create the Crayon zigzags, add some swirly shapes to the black rectangles. For the square, you can fill in your child’s name or write Crayola.

Perfect sugar cookie recipe

Yields 2-1/2 dozen cookies

Ingredients:

  • 3/4 cup butter, unsalted and softened
  • 1 cup white sugar
  • 2 eggs, room temperature
  • 1/2 teaspoon vanilla
  • 2-1/2 cups flour
  • 1 teaspoon baking powder
  • Dash of salt

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a KitchenAid mixer, place the butter and sugar. Mix on low until creamy. Add in eggs, one at a time, stirring well after each addition. Add in vanilla. Add flour, one cup at a time, until fully incorporated. Add in baking powder and salt.
  3. Carefully mold the dough into a disc. Place in greased plastic wrap and chill for at least 2 hours.
  4. Once chilled, roll out dough. Cut out squares (for the chalkboard cookies) and pencil shapes (for the crayons and pencils). For the crayons, cut the tip off the top so it’s flat instead of pointed. Place the pencil/crayon shapes into the freezer for 15 minutes to prevent from spreading.
  5. Place on a greased baking sheet and bake for 8–10 minutes, or until golden.
  6. Let cool on a wire cooling rack until completely cool.
