Stir-fry soba noodles with pork and vegetables

Asian flavors in one bowl is magic to the palate. Stir-fry is one of the common and popular ways to enjoy Asian dishes. Soba noodles, made with buckwheat flour, are mixed with diced pork and vegetables. It definitely tastes like Asia, and it can come straight from your own kitchen.

Stir-fry soba noodles with pork and vegetables recipe

Serves 4

Ingredients:

  • 1/2 pound soba noodles
  • Sunflower oil (you can use other types of oil)
  • 1 onion, sliced
  • 1 garlic clove, finely chopped
  • 12 ounces pork, diced
  • 7 ounces asparagus, chopped
  • 1 eggplant, diced
  • 1/2 cup corn kernels
  • 1/8 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon honey
  • Ground pepper
  • Sesame oil
  • Sesame seeds, toasted

Directions:

  1. Over medium-high fire, boil a pot of water with salt. When the water boils, add the soba noodles and cook for 4 minutes. (Can change according to the pack you bought.) Place the noodles in a colander then rinse them with cold water under the faucet. Set aside.
  2. Over medium fire, in a wok, saute the onion and garlic for 2 minutes with sunflower oil.
  3. Add the pork. When they are cooked through, add the vegetables. Cook for 10 minutes.
  4. While cooking the pork and vegetables, get a bowl and mix the soy sauce, mirin, honey, pepper and sesame oil.
  5. Add half of the mixture to the wok. Cook for another 5 minutes.
  6. Mix in the soba noodles. For 2-3 minutes, mix the noodles well with the meat and vegetables. Sprinkle with sesame seeds.
  7. Add the remaining half of the sauce. Add more sesame oil.
  8. Serve warm.
