There is no better way to start your day than a giant bowl of oatmeal. It’s even better when it’s made with pumpkin and pumpkin pie spice. We then topped it with a handful of homemade cranberry granola. You’re never going to want to skip breakfast again!

Pumpkin pie oatmeal recipe
Serves 2 to 4
Ingredients:
- 2 cups whole milk
- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1-1/2 teaspoons pumpkin pie spice
- 1/4 cup dark brown sugar (more or less depending on desired sweetness)
Directions:
- In a medium-size pot, add all ingredients.
- Bring to a slight boil and stir until the liquid has cooked down and oatmeal reaches desired consistency.
- Remember to stir constantly so you do not scorch the milk.
- Top oatmeal with cranberry granola.

Cranberry granola recipe
Yields about 2 cups
Ingredients:
- 1/3 cup maple syrup
- 2/3 cup brown sugar
- 1/2 cup cranberry juice (100% juice not juice cocktail)
- 1-1/2 teaspoons pumpkin pie spice
- 2 cups rolled oats (old-fashioned)
- 1/4 cup chopped almonds
- 1/4 cup chopped walnuts
- 1/4 teaspoon kosher salt
- 1 cup dried chopped cranberries
Directions:
- Preheat oven to 325 degrees F and line a rimmed baking sheet with parchment paper or a Silpat liner, set aside.
- In a small saucepan, add maple syrup, brown sugar, cranberry juice and pumpkin pie spice. Cook over low heat until the sugar is dissolved and the mixture is slightly warm.
- In a large bowl, add oats, almonds, walnuts and salt.
- Pour maple mixture over the oats and toss.
- Spread oat mixture onto the prepared pan and bake for 20 minutes.
- Add in dried cranberries, toss and bake for another 15 minutes.
- Cool and sprinkle over oatmeal or yogurt.
