Crepes with Brie, walnuts & honey

There’s something that you call a perfect marriage of tastes. Cheese, nuts and honey offer an unexpected combination of saltiness and sweetness!

Thin and soft, crepes are so flexible and they go with everything, whether savory or sweet. With an interesting combination of cheese, honey and nuts, here’s a very simple recipe that’s quick to put together when you want a dessert that’s not so ordinary.

Crepes with Brie, walnuts & honey recipe

Makes 6 crepes

Ingredients:

  • 1 cup milk
  • 5 ounces flour
  • 2 eggs
  • Pinch of salt
  • 2 tablespoons melted butter
  • 7 ounces Brie, diced
  • Butter
  • 12 walnuts, shelled
  • Dark honey (like chestnut honey or cardoon honey)

Directions:

  1. In a bowl, mix the milk, flour, eggs, salt and melted butter. Let it rest for 30 minutes to 1 hour in the refrigerator.
  2. Over low fire, in a crepe pan or regular skillet, melt a knob of butter. Swirl it around the pan to distribute well.
  3. Pour in some batter, swirl it around the pan to make a thin crepe. When cooked, flip it and cook the other side. Repeat to make more crepes until the batter is finished.
  4. In one corner of the crepe, scatter some Brie. Fold the crepe. Repeat. Transfer the crepes in a baking pan. Put a little knob of butter (the size of a tip of a teaspoon) on each crepe.
  5. Bake them in a preheated oven of 375 degrees F for 8-10 minutes or until the cheese has completely melted.
  6. Drizzle the crepes with honey. Garnish with walnuts and flaxseeds.
  7. Serve while still hot.
