These delightful bites couldn’t be easier to make, and you won’t need to turn on your stove or worry about how the chocolate forms. The secret to these sweets is dates. Yes, dates! Their natural sweetness makes it easy to incorporate them into lovely truffles. Eat them yourself or share them as a wonderful gift!
Chocolate-date truffles with coconut and almonds recipe
Yields 16 truffles
Ingredients:
For the coating
- 1/4 cup unsalted almonds
- 2 tablespoons unsweetened coconut flakes
- 1/8 teaspoon salt
For the truffles
- 1-1/2 cups pitted Medjool dates
- 3 tablespoons gluten-free unsweetened cocoa powder
- 3 tablespoons unsweetened coconut flakes
- 1/4 cup unsalted almonds
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
Directions:
For the coating
- Add the 1/4 cup almonds, 2 tablespoons coconut and 1/8 teaspoon salt to a food processor and pulse until the almonds turn to small pieces. You want to have pieces that are slightly chunky.
- Transfer the mixture to a shallow bowl and set aside.
For the truffles
- Add the dates, cocoa powder, 3 tablespoons coconut flakes, 1/4 cup almonds and the cinnamon to a food processor.
- Blend until a thick paste forms. If your mixture is too dry, add 1 teaspoon of water to the mixture, then blend again. Repeat as needed.
- Place a few tablespoons of water in a shallow bowl near your work area.
- Use a teaspoon to scoop out the date mixture and roll it into a 1-inch ball. Dip the ball in the water, then into the coating mixture.
- Serve immediately, or store in your refrigerator in a covered container for up to a week.
